清爽肉菜--雪菜炒毛肚

Steps to make 清爽肉菜--雪菜炒毛肚

  • 1.新鲜猪肚,下水反复搓洗表面粘液。
  • 2.把猪肚翻过来,将里面的大油以及杂质摘除。
  • 3.猪肚撒上盐,反复搓表面以及里面,使其表面粘液去干净;用水冲干净后,再倒醋浸泡5分钟,并反复搓揉,直至猪肚没有异味,并有醋香味为止。
  • 4.洗干净的猪肚,下锅烧开,烫一遍。水倒掉。
  • 5.猪肚再次下锅,放水烧煮,大概煮3个小时,汤色奶白,用筷子一戳就透,猪肚即可关火。有喜欢有嚼头的,就减少煮的时间。
  • 6.猪肚切片,并准备好其他所有食材,洗净切好备用。
  • 7.雪菜下水泡洗数遍,一是去沙质,二是减少雪菜的咸味。
  • 8.锅内放油烧热,下葱姜干红椒爆香。
  • 9.下胡萝卜丝翻炒。
  • 10.再下猪肚翻炒,并加入盐,生抽。
  • 11.最后,加入雪菜芹菜翻炒,放入糖,鸡精,拌匀,大概2分钟,即可关火装盘。
