红豆桃山月饼
桃山月饼,饼皮采用白芸豆沙配以蛋黄、牛奶、奶油等材料秘制调配而成,口感以细腻而闻名于世。将桃山饼皮运用到月饼上,改变了一直以小麦粉做月饼饼皮的传统,现今的桃山月饼颜色更丰富,而且馅料种类也更多些。这次的红豆桃山月饼,饼皮有樱桃味、巧克力味、抹茶味和乳酪味。相比于传统的小麦粉饼皮的月饼,桃山皮的月饼口味更纯正,具有沙性,绵酥利口,而且表面花纹清晰,边角分明,不露馅。

Steps to make 红豆桃山月饼

  • 1.食材:桃山皮和红豆馅,可以自己制作,也可以购买现成的。模具是50克的月饼模。
  • 2.红豆馅30克一个,纯色的桃山皮20克一个,混色的桃山皮四个口味各5克凑成20克一个。皮和馅各准备10份。
  • 3.将桃山皮压扁,包入红豆馅。
  • 4.无需沾干粉,揉圆放入模具。
  • 5.压制月饼。
  • 6.将压好的月饼放入烤盘。
  • 7.烤箱上下火180度预热5分钟后,放入中层,烘烤10-15分钟出炉。
  • 8.出炉后冷却到室温。
  • 9.放入月饼盒子中,冷藏保存,请在1周内吃完。
