可可戚风蛋糕

  • 可可粉10克
  • 鸡蛋5个
  • 蛋清1个
  • 色拉油40克
  • 鲜牛奶40克
  • 60克(蛋白)+30克(蛋黄)

Steps to make 可可戚风蛋糕

  • 1.所有材料。其中多余的蛋清是做卡士达酱剩下的,没有可以不加
  • 2.蛋白蛋黄分离。蛋白盆中无水无油。蛋黄和30克白糖混合,打散,切记不要打发
  • 3.加入色拉油。搅拌均匀
  • 4.加入牛奶,搅拌均匀
  • 5.低粉,可可粉过筛到蛋黄糊中
  • 6.翻拌均匀,待用
  • 7.此时预热烤箱,上火130,下火110。蛋白分三次加入白糖打发,可以滴几滴白醋,增加蛋白稳定性。滴几滴白醋,开始打发蛋白,当呈鱼眼泡的时候加入1/3的白糖,开始变浓稠呈粗泡沫时再加入1/3白糖,蛋白比较浓稠,表面出现纹路的时候再加入剩下的白糖
  • 8.打发如图,筷子能立在蛋白中不倒
  • 9.或者查看是否出现如图的小尖角
  • 10.取1/3打发的蛋白放入蛋黄糊中,翻拌均匀
  • 11.将混合好的蛋黄糊倒回盛蛋白的盆中,翻拌均匀,直至蛋白蛋黄糊充分混合。注意手法,避免消泡
  • 12.混合好的蛋糕糊
  • 13.倒入模具中,震出里面的气泡。送入预热好的烤箱中,烤70分钟
