油麦菜戚风蛋糕
油麦菜戚风蛋糕:新烤箱剪彩了,头一锅烤的蛋糕。今天的蛋糕里加了油麦菜,本想买菠菜,但满市场找不到,想要那种新鲜欲滴的翠绿感觉,只好用油麦菜代替了,新烤箱的确是好,蛋糕体烤出来很高,软软湿润的口感。

  • 油麦菜泥50克
  • 玉米油50克
  • 鸡蛋5个
  • 白糖60克

Steps to make 油麦菜戚风蛋糕

  • 1.油麦菜洗净
  • 2.放入榨汁机,加少量水,榨成油麦菜汁
  • 3.蛋清蛋黄分离,分别放到无水无油的两个容器中
  • 4.蛋黄加入30克细砂糖,用手动打蛋器搅拌均匀
  • 5.加入玉米油搅拌均匀
  • 6.再加入50克菠菜泥拌匀。
  • 7.再加入低筋面粉,再次搅拌均匀,搅拌至无颗粒
  • 8.鸡蛋白中滴入几滴白醋,先用慢速打至成粗泡,分3次加入30克细砂糖
  • 9.快速打至出纹路状
  • 10.最后出现小直尖的状态
  • 11.取三分之一的蛋白加入到蛋黄糊中,用刮刀搅拌均匀
  • 12.然后再加入剩余的鸡蛋白,轻轻从底部刮起搅拌均匀
  • 13.将面糊倒入模具,颠几下震出大气泡
  • 14.送入预热好的烤箱里,倒数第二层、用上下火130度烤30分钟后,改成140度再烤20分钟即可出炉。
  • 15.蛋糕出炉马上倒扣,等待自然凉却后即可脱模。
  • 16.脱模用小刀在蛋糕与模具之间划一圈,然后在底部轻轻推出
