白灼虾
白灼虾以鲜虾通过白灼之法烹饪而成,虾鲜嫩,美味可口,而且烹饪简单。所谓“白灼”,是突出粤菜清淡手法之一,以煮滚的水或汤将生的食物烫熟,称之为“灼”,说白了那就是我们北方的水煮虾,但是又不是直接扔进水里直接煮哟。

Steps to make 白灼虾

  • 1.准备好全部食材。
  • 2.大虾清洗下,挑出虾线,虾须子也一并剪掉备用。
  • 3.当水沸腾后,不要马上倒入大虾,要继续煮一分钟,把姜片的鲜味煮出,不但去腥,口感也会更好,加盐会使虾肉质更紧实有弹性。
  • 4.煮的时候,稍微搅动几下,让虾受热更均匀。
  • 5.一直煮到汤水沸腾,关掉电源。
  • 6.将大虾捞出按自己喜欢的方式摆到盘中。
  • 7.接着准备蘸料,把深煮锅洗净搽干水分后倒入少许油加热,下蒜末、葱花炸香后关火。
  • 8.把炸好的蒜末、葱花倒入小碗内,再加入2~3勺低盐酱油拌匀,我们的白灼虾就可以上桌开吃喽!
