  • 精盐1/4小匙
  • 生粉2小匙
  • 芝麻油1小匙
  • 花椒粉1/2大匙

Steps to make 宫保鸡丁

  • 1.花生浸泡,同时泡花椒。
  • 2.生姜、葱白切丝,用清水约1/4杯来泡,用手抓几下以出味。
  • 3.把鸡腿肉切丁入碗,加生抽1大匙、精盐1/4小匙、胡椒粉1/3小匙、白酒1大匙、姜葱水1大匙,抓均匀,加玉米淀粉2小匙,抓匀,加菜油2大匙,稍抓过,静置20分钟。
  • 4.把黄瓜切丁、花生滤水。
  • 5.葱白切粒、生姜、蒜头切片、干辣椒切段。
  • 6.置一碗,放生抽1大匙、白糖1+1/2大匙、浙醋1大匙、白醋1/2大匙、料酒1大匙、姜葱水1大匙、精盐1/4小匙、生粉2小匙、芝麻油1小匙,搅拌均匀。
  • 7.冷油落锅,放花生,开中大火,慢慢炒至转微黄脱皮,盛起备用。
  • 8.锅留油,把花椒炒出味,盛起滤油。
  • 9.放入干辣椒段,稍爆香。
  • 10.加入鸡丁,稍翻炒片刻,拨一边。
  • 11.在锅空的一边加入备用的葱白、蒜片和姜片,爆香。
  • 12.快速兜匀。
  • 13.倒入碗汁,翻炒至起泡。
  • 14.加黄瓜,翻几下,收火。
  • 15.加花椒粉1/2大匙。
