五彩炒饭(扬州炒饭)
看似一碗简单的扬州炒饭,其实做法还是蛮复杂的。严格说来,其配料就达十种左右。此款五彩炒饭便是按自己的口味选了其中的虾仁、青豆、玉米粒、鲜香菇、腊肉作为辅料。做此饭关键在于白饭要不干不湿能粒粒炒散,等饭炒熟后直接在锅内打蛋迅速炒开,使每粒米饭都裹上蛋液,粒粒金黄,加上辅料的各颜色,这五彩的炒饭就味香色美了。

Steps to make 五彩炒饭(扬州炒饭)

  • 1.鲜虾剥壳用少许蛋液浆浆半小时;
  • 2.胡萝卜、香菇、腊肉切丁,玉米粒、青豆备用。
  • 3.锅内倒油烧到六成热放入虾仁迅速划散炒片刻盛出;
  • 4.锅内另加油烧热依次下腊肉、香菇、青豆玉米粒和胡萝卜炒熟盛出备用;
  • 5.锅内再倒油烧热将米饭倒入炒至粒粒散开;
  • 6.直接打入两个鸡蛋;
  • 7.迅速炒散使每粒米饭都裹上蛋液;
  • 8.加入已加工好的辅料炒匀;
  • 9.加盐、鸡精调味即关火。
