红烧狮子头
操  作: 1、将藕剁成细粒,姜用刀切末,鸡蛋打入干淀粉里少许水,按顺时针方向搅成全蛋糊。

Steps to make 红烧狮子头

  • 1.操  作: 将藕剁成细粒,姜用刀切末,鸡蛋打入干淀粉里少许水,按顺时针方向搅成全蛋糊。
  • 2.将蛋糊倒进肉馅、在下入姜末藕末,放适量盐和,顺时针方向搅拌上劲。
  • 3.把肉馅捏成大的丸子。
  • 4.锅中放油烧至七成热,下丸子炸约五分钟。
  • 5.捞出沥干油份装盘待用。
  • 6.将锅中的油盛出后、剩少许油把姜、葱,花椒炸出香味,放入丸子,加约两斤汤或水、三大匙酱油烧沸后改微火烧一小时以上。
  • 7.熟透后把丸子捞出装盘待用。
  • 8.把菜心放入锅里的汤中烧约一分钟至熟。
  • 9.捞出菜心装丸子盘里,锅中勾芡后淋入盘中即成。
