【电饭锅烘焙】——电饭锅戚风蛋糕
这是弄蛋糕以来最成功的一次,微黄的色泽,松软蓬松的口感,没有烤箱,有电饭锅也一样可以烤出美味的戚风蛋糕。

Steps to make 【电饭锅烘焙】——电饭锅戚风蛋糕

  • 1.蛋黄蛋白分离,分别装入无油无水的容器里。蛋黄中加入10克细砂糖,用手动打蛋器搅拌均匀、成较蓬松的状态。
  • 2.加入融化的植物油搅拌至完全融合,这时候的状态会比没加油的时候浓绸。
  • 3.筛入面粉,搅拌均匀,就成蛋黄糊了。
  • 4.蛋白里加入2滴白醋,用漏勺或调羹(三根筷子不好打发,我用的是吃饭的调羹,很好用)快速搅拌至起大泡,加入20克细砂糖。
  • 5.搅拌至起大泡,加入20克细砂糖。
  • 6.搅拌至湿性发泡时加入第3次加入20克白糖。
  • 7.继续搅拌成接近硬性发泡,提起来,蛋白表面能出现挺直的尖角。此时倒扣盆,蛋白不会掉,也不会移动.
  • 8.取1/3的蛋白,加入蛋黄糊中,用调羹按不规则方向,上下翻拌均匀。(是上下翻拌,就像炒菜那样,而不是画圈圈的方式搅拌)
  • 9.再把拌好的蛋黄糊,倒回剩余的2/3的蛋白中,继续按不规则方向,用上下翻拌的手法搅拌均匀,拌好的蛋糕糊应该是无颗粒、蓬松、轻盈、细腻的状态。将蛋糕糊倒入电饭锅中,按煮饭键,当指示灯跳到保温时就可以了。
