Steps to make 中种小面包

  • 1.制作中种面团,高筋面粉350g,即发干酵母4g,水210ml,混合
  • 2.和成面团,放置温暖处进行发酵
  • 3.发至原来的3倍大
  • 4.制作主面团,高筋面粉150g,即发干酵母1g,盐2g,糖40g,鸡蛋液(留少许)水50ml
  • 5.主面团材料混合,加入撕成小块的中种面团
  • 6.揉制
  • 7.至完全阶段
  • 8.将揉好的面团覆保鲜膜醒发40分钟
  • 9.醒发好的面团分成12份,排气
  • 10.滚圆,松弛15分钟
  • 11.将面团擀成椭圆形,翻面后自上下各三分之一向内折
  • 12.压薄底边,自上而下卷成卷
  • 13.放入烤盘中,烤箱中放1小碗热水,将摆好面包坯的烤盘放入烤箱内,进行最后的醒发
  • 14.醒发40分钟,取出,表面刷蛋液
  • 15.烤箱预热5分钟,放入烤盘,170°C,中下层,上下火
  • 16.25分钟即可
