豆沙环形面包
豆沙面包在面包店非常常见的一种面包,我女儿小时候进面包店就要买豆沙面包,在踏入烘焙行列后,学着做面包,豆沙面包也成了我家很寻常的面包之一,只是形态时时变化,有时扭一下成豆沙花环面包,有时做成毛毛虫形状,这次豆沙面包以环形呈现出来。

  • 高筋面粉300克
  • 奶粉12克
  • 165克
  • 全蛋液30克
  • 细砂糖30克
  • 4克
  • 干酵母粉4克
  • 黄油25克
  • 红豆沙300克

Steps to make 豆沙环形面包

  • 1.将除黄油外的所有面团材料搅拌至光滑,加入黄油搅拌至薄膜状,将面团用保鲜膜覆盖放在室温下进行基础发酵。
  • 2.面团发酵至原来的2倍大。
  • 3.将发酵好的面团分割成每个64克的小面团,滚圆,盖上保鲜膜松弛15分钟。
  • 4.在小面团松弛过程中,将豆沙馅料分割成30克一个。
  • 5.将松弛好的小面团,用手掌拍一下(光滑面朝下),使面团排出空气,包入30克红豆沙,将封口收紧。
  • 6.将包好的小面包坯子,用手掌压扁,用擀面杖擀成椭圆形.
  • 7.在面包表面割十几刀,不要割断。
  • 8. 翻面,从一面卷起成长条状。
  • 9.豆沙条纹朝上,围成环形,整齐排列在烤盘上。
  • 10.放入室温下进行最后发酵,约原来的2倍大,在面包面上刷全蛋液。
  • 11.烤箱提前预热好,将烤盘放在烤箱中层,上下火,180度烤18分钟。
  • 12.烘烤时要根据烤箱的温度调整时间。
