无糖红枣纸杯蛋糕,松软绵密,浓浓红枣香
小朋友馋吃蛋糕了怎么办?吃不了太多的糖,尤其是2-3岁的小朋友,少吃糖预防蛀牙。还是来一款松软的无糖红枣蛋糕。吃起来就是红枣的清甜,没有添加额外的糖。
虽然没有加糖,蛋白也是打发过的,所以口感吃起来很松软,小朋友吃起来完全不费力!微甜款,如果想要吃起来甜一些,打发蛋白的时候可以加10克糖!

Steps to make 无糖红枣纸杯蛋糕,松软绵密,浓浓红枣香

  • 1.准备材料,鸡蛋需要冷藏鸡蛋,红枣用无核的。鸡蛋分离蛋黄、蛋白(放入干净盆中冷藏备用)。
  • 2.清洗干净的红枣放入不粘锅,加水没过红枣,大火煮10分钟(如果用有核红枣,煮好后去核)。捞出和牛奶放入料理机。
  • 3.打成细腻红枣泥,倒入盆中。倒入玉米油搅打混合。
  • 4.筛入低粉。
  • 5.之字形混合成顺滑滴落的红枣蛋黄糊。预热烤箱上下150度。
  • 6.蛋白滴入几滴柠檬汁去腥。用电动打蛋器顺一个方向、中速打到提起打蛋头呈现小弯钩状态,转低速打2圈整理大气泡。
  • 7.取1/3蛋白霜入蛋黄糊中,左手配合逆时针转盆,蛋抽从2点钟方向切入,从盆底划到7点钟方向翻起到盆中心,初步混匀。拌匀的面糊倒回到剩余蛋白霜中,同样操作混匀,最后用刮刀将盆边和盆底蛋抽没有拌匀的,再翻拌几下即可。
  • 8.倒入纸杯9分满。撒上红枣碎和白芝麻。
  • 9.送入预热好的烤箱中层,转上下120度烤30分钟,转140度再烤10分钟上色。
  • 10.烤完出炉,振2下振出热气,冷凉好了密封打包即可!
