羊肉拉条子
这碗面看上去有点儿复杂,抓住重点就变得简单了。
和面:加少许盐,揉成光滑的面团,反复醒、揉。
炒臊子:羊肉炒干水分再放葱姜蒜炒香,再放辣椒面炒出红油。随便放一样配菜,加水调味。
就这么简单!

  • 1.面粉中加入少许盐,揉成光滑的面团,盖上保鲜膜。
  • 2.羊肉切丁,葱姜蒜改刀备用。
  • 3.豆角切丁,干香菇泡软切丁。
  • 4.土豆切丁,放清水中浸泡。
  • 5.炒锅放油烧热,放入羊肉翻炒。
  • 6.将羊肉中的水份炒干,放少许五香粉。
  • 7.放葱姜蒜炒香。
  • 8.放辣椒面炒出红油。
  • 9.放入土豆丁。
  • 10.放入香菇丁。
  • 11.放入豆角丁。
  • 12.放入番茄酱,翻炒片刻。
  • 13.加入泡香菇的水。
  • 14.放入豆腐丁。
  • 15.放入生抽。
  • 16.放盐调味。
  • 17.加入适量的开水,炖至入味,放少许味精就可以了。
  • 18.将醒好的面擀成薄片。
  • 19.切成宽条,拉成长条,下锅煮熟。
  • 20.将面捞入碗中,浇上羊肉臊子。
  • 21.成品。
