自制蛋黄沙拉酱
(百度)一般我们所购买的瓶装沙拉酱的主要原料是植物油、鸡蛋黄和酿造醋,再加上调味料和香辛料等调制而成。其中植物油在欧洲多是用橄榄油,而在亚洲一般是使用大豆色拉油。油类与鸡蛋黄经充分搅拌后,发生乳化作用,就成了味美可口的沙拉酱。而少量醋主要起抗菌作用,因而沙拉酱中一般不含防腐剂,可算做一种“绿色食品”

Steps to make 自制蛋黄沙拉酱

  • 1.准备好所有食材
  • 2.鸡蛋清和鸡蛋黄用分离器分开
  • 3.取鸡蛋黄
  • 4.用蛋抽把蛋和糖搅拌抽打。
  • 5.使糖和蛋黄充分融合。
  • 6.放油打(起初要一点点的加油)
  • 7.随着搅打,会发现蛋黄酱会越来越稠,打到如图的粘稠度时加入几滴白醋继续打。
  • 8.加醋后,酱会变的稀一点。然后再重复加油、加醋的交互过程,直到油和醋都加完,打到有沙拉酱质感的粘稠程度即可(此过程相当辛苦,手腕也快断了)。
  • 9.最后的沙拉酱是可以酱紫的
