油盐千层卷

Steps to make 油盐千层卷

  • 1.面粉300克,糖5克,酵母3克
  • 2.面粉中加入5克白糖、3克酵母粉,约170克温水搅成絮状
  • 3.搅成絮状后下手揉成一个比较光滑的面团松弛十分钟
  • 4.面团松弛十分钟就好,不用醒发。(泽瑞妈的面板比较小,分了两份操作)
  • 5.取一份面团擀开,擀的越薄越好。案板小,擀不开可以把一边叠起来,擀完一边在擀另一边。擀得薄一些,卷的层次多一些,成品的纹理才会清晰多层。
  • 6.擀好的大薄片撒上食盐、抹上食用油,再撒上少许干面粉。(撒干面粉是为了让层次更清晰)
  • 7.从一边卷起来,卷好之后如果觉得擀的不够薄可以均匀的搓几次,让面皮更薄。
  • 8.第二份面团泽瑞妈撒了香豆粉,比原味的增加了特殊的风味。也可以做成椒盐口味的,喜欢甜口也可以做成麻酱的,自家吃食,依着自己家人的口味就好。
  • 9.卷好的生坯放入蒸笼里面,醒发一倍大。
  • 10.醒发明显变大后,开火,上汽后计时,蒸12分钟,焖三分钟出锅。
  • 11.出炉啦,切成自己喜欢的大小,蓬松脆软,层次分明。
