【开胃下饭菜】酸辣带鱼
来来来~~~继续做带鱼~~~~
带鱼被我每天带着锅啊、勺啊、各色调料军等攻击~~~带鱼终于露出了败相~~~
冰箱冷冻层终于空了两层~~~~~
我吃着喜欢的带鱼,心里很欢喜~~~~
老公看着快要空空的冰箱,心里也很欢喜~~~
于是,我们都很欢喜~~~
PS:老公不讨厌带鱼,他讨厌冰箱被塞满的感觉~~~不知其他厨娘的老公是否也有这个“缺点”~~~这个“缺点”比较令人讨厌的地方就是:每当你要大量囤货在冰箱的时候,他就跳出来敦敦教诲:“理智,理智,要理智啊,理智啊~~~”

Steps to make 【开胃下饭菜】酸辣带鱼

  • 1.带鱼洗净,剪断,再用剪子理开带鱼的肚腹处,撕掉黑膜。鱼头处需撕掉鱼鳃,鱼身两边的鳍也要剪掉。带鱼用流动水反复冲洗干净。
  • 2.带鱼用适量料酒,食盐抹匀,腌制片刻;
  • 3.腌制好的带鱼,拭干水分,裹上面粉;
  • 4.干辣椒剪短,备好花椒;
  • 5.小米辣洗净去蒂,也剪短;再切些酸菜碎、芹菜碎、姜蒜碎、甜椒丁;
  • 6.锅置火上,烧热后,倒入适量植物油烧热;放入带鱼炸至微黄;油可以不用放那么多,半煎半炸;
  • 7.锅里留底油烧热,放入郫县豆瓣酱炒香;
  • 8.放入酸菜炒香,再放入芹菜碎;
  • 9.放入干辣椒、花椒;
  • 10.放入小米辣炒香,再倒入开水,调入适量生抽、香醋、白糖、胡椒粉、姜蒜碎;
  • 11.汤汁烧开后,放入炸好的带鱼煮开;
  • 12.汤汁煮开后,再让它滚几分钟;
  • 13.带鱼煮熟后,调入芹菜叶碎、甜椒丁,轻轻翻拌均匀,酌情调入适量盐;
  • 14.起锅前调入适量淀粉水,再次轻轻翻拌均匀;
  • 15.关火,起锅,装盘。
