快过年了!上海人饭桌上少不了百叶包,换个包法,好吃又好看!又有好口彩。作为一道清淡刮油的年夜菜应该是不错的选择。

  • 猪肉200克
  • 薄百叶1张
  • 鸡蛋1只
  • 食用油1勺
  • 生抽1匙
  • 淀粉1匙
  • 香葱6根
  • 高汤半饭碗
  • 生姜3片

Steps to make 百叶福袋(百叶包肉)

  • 1.香葱洗净,选9根长葱叶。
  • 2.放锅中焯一下水。
  • 3.其他香葱切葱花。
  • 4.将一张薄百叶切成8片正方形,放清水中浸泡变软。
  • 5.猪肉加生姜剁成肉糜。
  • 6.肉糜里面加鸡蛋,淀粉,生抽,食盐,食用油和适量清水。
  • 7.朝一个方向搅至上劲,清水方向搅拌上分次加入,每次加半个鸡蛋水量,加四到五次左右,视情况而定。
  • 8.最后加葱花。
  • 9.再次搅拌均匀。
  • 10.将肉糜放冰箱冷藏半小时以上,让肉糜完全入味后,取出舀一匙肉糜放薄百叶的中间。
  • 11.将百叶合拢,用焯过水的葱叶将百叶包扎好。
  • 12.其余七个也同样包好。
  • 13.入蒸锅蒸十五分钟左右。
  • 14.蒸好,揭盖舀一勺高汤淋在百叶包上面。
  • 15.里面的肉糜加了蛋清和清水后搅拌使得肉质鲜嫩Q弹多汁。
