尽管我实在看不出来这盘里哪来的群仙,哪来的春,我赶脚换个马夹这小样儿还是个肉圆儿

话说最近正琢磨着有关年菜整个啥好彩头的玩意儿呢,翻翻小本子里不知道啥时候记了这道

想着虽说最近掌管了猫府厨房,但是年夜饭的时候估计还是要被猫爸给驱出圣地的

于是昨天炸肉圆的时候特意留了点猪绞肉,还是老老实实的就剩早来迎下春吧

    Steps to make 肉圆儿穿新衣--『群仙喜迎春』

    • 1.肉馅:猪绞肉内加入荸荠末,姜末,葱末,盐,白胡椒粉,料酒,蚝油,蛋白,太白粉
    • 2.所有材料一起搅打上劲和成馅料
    • 3.铺盘:碗豆苗择去老梗后洗净
    • 4.滚水锅中加一匙盐,几滴油,将豆苗烫熟后铺在成品盘中备用
    • 5.三丝:木耳,蛋皮,火腿分别切丝备用
    • 6.绣球:将肉馅挤成丸子状,将三丝均匀裹在肉馅表面,起蒸锅将绣球排入盘中大火蒸15分钟后取出摆铺好底的成品盘中
    • 7.芡汁:高汤加热后加少许盐调味,将蒸绣球的汤汁同倒入加热
    • 8.加太白粉水勾芡起锅淋入香油调味
    • 9.最后将汤汁淋在绣球上即可
