咸蛋黄鲜肉月饼

  • 咸蛋黄10个
  • 料油10g
  • 浓汤宝半小盒
  • 老抽6g
  • 蚝油3g
  • 砂糖6g
  • 白胡椒粉少许
  • 鸡粉少许
  • 中粉130克
  • 猪油45克
  • 砂糖15克
  • 55克
  • 低粉120克
  • 猪油60克

Steps to make 咸蛋黄鲜肉月饼

  • 1.提前准备好的料油(色拉油里加入八角、桂皮、香叶、草果、白胡椒粉等熬制)和葱姜水
  • 2.猪肉泥里加入料油、老抽、蚝油、白胡椒粉、砂糖、盐、鸡粉拌匀
  • 3.加入适量葱姜水,分次加入拌匀
  • 4.再加入适量化开的浓汤宝水,拌匀
  • 5.加入适量葱花拌匀备用
  • 6.咸蛋黄放入烤盘里入烤箱170度烤5分钟左右,烤的时候最好喷点白酒
  • 7.取适量猪肉馅包上一颗咸蛋黄
  • 8.搓圆备用
  • 9.制作水油皮:将主料里的中粉 、糖、猪油、水放入面包机桶里,启动和面功能和面至出筋
  • 10.制作油酥:120克低粉加入60克猪油拌匀
  • 11.把2个面团分别装入保鲜袋放入冰箱冷藏松驰半小时
  • 12.取出松弛好的水油皮和油酥,分别分成10等份,每次都要盖好保鲜膜
  • 13.取1个水油皮压扁擀大包住油酥团
  • 14.慢慢收紧口,包好后盖上保鲜膜松弛一会
  • 15.取1个松弛好的面团擀成牛舌状
  • 16.卷起来,卷好之后,收口朝上,盖上保鲜膜,松驰15分钟
  • 17.松驰之后,取一份,收口向上,用擀面杖擀长后
  • 18.再次卷起来,盖上保鲜膜,松驰15分钟
  • 19.取一个松驰好的卷,2头向中间靠拢
  • 20.用擀面杖压扁擀大,包上准备好的馅
  • 21.慢慢收口,一定要捏紧
  • 22.排放在烤盘里
  • 23.刷上一层蛋液
  • 24.可以用八角印个红章,或者撒点黑芝麻
  • 25.放入预热好的烤箱,180度烤25分钟左右即可,中途上色前盖上锡纸
  • 26.完成
