红油口水鸡

Details of ingredients

  • 鸡腿2个
  • 芝麻酱1大匙
  • 生抽1大匙
  • 1小匙
  • 粗辣椒粉1大匙(微辣)
  • 细辣椒粉1小匙(很辣)
  • 花椒粉1小匙
  • 鸡汤半碗
  • 辣椒红油1大匙
  • 八角1个
  • 花椒1小匙

Steps to make 红油口水鸡

  • 1.鸡腿2个,洗净
  • 2.洗净的鸡腿放进锅里,加没过鸡腿的水,加姜片、葱段、八角、花椒
  • 3.大火烧开后撇净浮沫
  • 4.改中小火慢煮,鸡腿很容易熟的,我煮了10分钟,关火后再焖十多分钟
  • 5.将煮过焖好的鸡腿捞出,放入冰水里冰十多分钟(我事先准备了一盆清水,放到室外,我们这边气温已到零下,用时这盆水表面已结冰)
  • 6.准备配料。花生炒熟,也可以烤熟或微波炉叮熟
  • 7.炒熟的花生仁去皮备用
  • 8.另准备一小碗,加入一大匙芝麻酱,1大匙生抽,1小匙糖,1小匙盐,拌匀
  • 9.再加入煮鸡腿的鸡汤半碗,搅匀备用
  • 10.葱姜切碎
  • 11.锅里注油烧热爆香葱姜
  • 12.加入粗细辣椒粉、花椒粉
  • 13.小火炒香出红油
  • 14.加拌好的麻酱汁
  • 15.煮开并稍微浓稠后关火,放凉
  • 16.冰过的鸡腿去骨,要尽量带皮且保持鸡腿的完整性
  • 17.切段装入深碗里
  • 18.放凉的调味汁浇在鸡肉上
  • 19.我觉得不够红亮,又加了1大匙自制的辣椒红油(里面含白芝麻)
  • 20.最后撒上熟花生碎即可
