浓香脊骨烩酸菜
如果说有一种菜最能代表东北,那这个菜无疑是酸菜了。每一个去了异乡的东北人常常最思念的口味也是酸菜。我做为一个嫁到东北的南方人,刚开始对酸菜是抗拒的。可是在东北呆得越久就越来越喜欢上了这酸爽。

  • 脊骨500g
  • 酸菜半颗

  • 八角3颗
  • 鸡精少许

Steps to make 浓香脊骨烩酸菜

  • 1.准备脊骨、土豆和酸菜。酸菜切丝。
  • 2.将酸菜清洗后浸泡十分钟。
  • 3.水开后放入脊骨再次烧开一分钟捞出脊骨冲洗干净。
  • 4.炒锅放入少许底油,将脊骨煎炒至微黄。
  • 5.倒入适量料酒炒匀。
  • 6.将炒制过的脊骨放入高压锅,添加适量清水,加入少许老抽和五六粒山奈。调至排骨档压制。
  • 7.准备姜片、葱花、八角。土豆去皮切小块。
  • 8.炒锅中少许底油爆香葱姜和八角。
  • 9.将脊骨汤倒入炒锅,下土豆块加盖炖煮十分钟。
  • 10.将酸菜挤去多余水分下入锅中再焖煮五分钟。
  • 11.调入盐、少许糖和鸡精,把土豆压成泥。然后将汤汁烧至浓稠即可。
  • 12.出锅时洒上葱花。
