水晶虾饺

Steps to make 水晶虾饺

  • 1.馅料准备,将虾的一半剁成泥,另一半切小丁;
  • 2.先将猪肉馅、虾泥、姜、料酒、盐、白胡椒粉、糖混合,顺着一个方向搅拌;
  • 3.加入胡萝卜小丁和葱花,再次搅拌;
  • 4.顺着一个方向搅拌至上劲,盖上保鲜膜,放冰箱冷藏备用。
  • 5.虾饺皮做法:先将100克澄粉和10克生粉、盐混合搅匀,加入150克沸水,另外20克生粉暂时放一边备用;
  • 6.边冲边用筷子搅成雪花状;
  • 7.搅的过程中,尽量不要有干面;
  • 8.然后加盖焖5分钟
  • 9.将燙面趁热揉搓均匀,分次加入剩余的20克生粉;
  • 10.加入5克的油再揉,直到面团光滑。
  • 11.盖上湿布醒发20分钟,将面团搓成长条,切成一个一个小剂子
  • 12.擀成薄片,用模具印成圆形(用模具太慢了,后来都是手工擀的,擀得不怎么圆,但总得要多练习,才能进步嘛);
  • 13.包入馅料;
  • 14.把包好的虾饺依次摆在胡萝卜片上,锅中水烧开,开中火,蒸5分钟左右。
