  • 花椒1小勺
  • 生抽6g
  • 郫县豆瓣酱2大勺
  • 白糖1g
  • 老抽8g

Steps to make 【四川】川菜芋儿鸡

  • 1.备好食材:鸡腿去骨切块;芋头削皮洗净;再备好泡菜,大葱,老姜,大蒜,小葱;
  • 2.鸡肉里调入适量料酒,搅拌均匀后腌制片刻;芋头洗净切块;
  • 3.泡菜切碎;老姜,葱白切末;大蒜切片;葱绿切断;再备好干辣椒,花椒;
  • 4.芋头煮熟,捞出;
  • 5.炒锅烧热,倒入适量植物油;
  • 6.放入鸡肉煸炒至颜色发白,调入适量生抽,翻炒均匀后起锅;
  • 7.另起油锅,放入干辣椒,花椒炒香后,再放入泡菜炒香;放入葱末,姜末,蒜瓣继续翻炒;
  • 8.再放入郫县豆瓣酱炒出香味,之后调入适量白糖翻炒;
  • 9.放入鸡肉翻炒;
  • 10.倒入清水,水量腌过鸡肉即可;再调入适量老抽,搅拌均匀后,大火烧开转中火;
  • 11.鸡肉熟了之后,再放入芋儿;
  • 12.根据个人喜好收汁,放入葱段;
  • 13.起锅,盛出。
