戚风蛋糕卷
戚风蛋糕卷搭配紫薯椰蓉馅,浓郁香醇,酥脆可口,甜、香、脆完美融合。

Steps to make 戚风蛋糕卷

  • 1.鸡蛋分开蛋清、蛋黄。将蛋黄、盐、10g细砂糖、牛奶、色拉油搅打均匀,筛入低筋面粉,混合成蛋黄糊,备用。
  • 2.用电动打蛋器将蛋白打散,加入柠檬汁,分3次加入60克砂糖,打至湿性发泡(九分发)的程度,即:打蛋器上的蛋白尖峰长而不挺立,盆内的蛋白呈弯曲的尖角状即可。
  • 3.取1/3蛋白与蛋黄糊混合,用橡皮刮刀翻拌均匀。
  • 4.将拌好的面糊倒入剩下的2/3蛋白糊内,用切拌和翻拌的方式拌至蛋白糊与蛋黄糊完全融合。
  • 5.取10寸方形烤盘,烤盘底部垫油纸,蛋糕糊倒入烤盘,用刮刀将蛋糕糊抹平,将烤盘在案板上轻摔几次,去除大气泡。烤箱预热130度(具体所需时间根据自家烤箱温度定),中下层,上下火,烤30分钟。
  • 6.将烤盘从烤箱取出,双手拎着两边的油纸,将蛋糕拎出烤盘,放在凉网上,小心剥开四周的油纸,在另一个凉网上铺一张油纸,将蛋糕倒扣在新油纸上,并揭去原来的油纸。
  • 7.在蛋糕开始卷起处用刀切3-4条不到底的线条,这样卷的時候中心不容易裂开,将紫薯椰蓉馅均匀地抹在蛋糕表面。
  • 8.用擀面杖卷着油纸把蛋糕卷起来,卷好后定型10分钟。
  • 9.切段即可食用。
