奶黄馅冰皮月饼
奶黄馅是家里人都喜欢的,也可以做奶黄包。白色的冰皮配上黄色的奶黄馅,视觉上很养眼。奶黄馅很香,冰皮很Q。

Steps to make 奶黄馅冰皮月饼

  • 1.准备材料。
  • 2.220克牛奶中加入糖40克、炼奶30克。
  • 3.放入微波炉中加热,使糖溶化。
  • 4.将糯米粉50克、粘米粉50克、澄粉25克、低筋面粉25克放在大碗中加入热好的牛奶搅拌均匀,再加入30克玉米油充分搅拌,醒至20分钟。
  • 5.将做好的面糊两次过筛,然后盖上保鲜膜、放入蒸锅大火蒸30分钟,途用筷子搅拌一下,防止因面糊沉淀和水份分离
  • 6.将蒸好的冰皮用筷子搅拌至顺滑,趁热反复揉搓蒸好的粉团,凉了之后放到冰箱里冷藏2小时。
  • 7.分别用厨房秤按照面团20克、馅心30克的分量将冰皮、奶黄馅称好备用。
  • 8.去一个称好的冰皮将冰皮放在手心压扁。
  • 9.放上一个奶黄馅。
  • 10.用虎口夹住冰皮包住奶黄馅并慢慢往上推。直到全部包裹住收口。包好后,再用手搓成一个小球。
  • 11.把做好的月饼圆球放入模具里,用手压实。
  • 12.将月饼从模具中挤出来,冰皮月饼就做好了。做好的月饼放进冰箱,冷藏一晚,就可以吃了。
