麻辣脆爽----盐水鸡肫
鸡胗也是常说的鸡杂之一。形扁圆,外有筋膜,内有肫皮,两侧为肫肉。其肉为紫红色,质韧,熟后脆嫩。

从食疗的角度讲,鸡胗具有有消食导滞,帮助消化的作用。亦有治食积胀满、呕吐反胃、泻痢、疳积、消渴、遗溺,牙疳口疮,以及利便、除热解烦等作用。

鸡胗的烹制方法很多,冷、热菜肴皆可,成菜具有韧脆爽滑之感。一般常用的烹制方法为炸、爆炒、卤等。卤的时候一般都选择整枚而烹;炸则会在鸡胗上打上花刀;爆炒或普通炒食则要将鸡胗切片。

盐水鸡肫不仅具有咸肉特殊的香气,而且口感软中带脆,脆中透韧,无论是作为小吃还是佐酒小菜着实不错!

Steps to make 麻辣脆爽----盐水鸡肫

  • 1.鸡肫洗净,去掉外皮上的白色筋膜,改刀切成2瓣。
  • 2.葱、姜、蒜切末,小米椒切小圈备用。
  • 3.取一大碗,鸡肫中加盐、小米椒、葱末、姜末、蒜末、料酒、高汤、花椒。
  • 4.抓匀,密封入冰箱冷藏腌制1小时。
  • 5.入上汽蒸锅中蒸25分钟。
  • 6.取出晾凉,装盘,淋香油拌匀即可。
