宫保豆腐
据网上介绍宫保豆腐是四川省的传统名菜之一,是由老豆腐、干辣椒和花生米等配料炒制而成。这道菜是由宫保鸡丁演变而来的,两者烹调方法基本相同,只是鸡丁被老豆腐取代了。以前也做过这道菜,但这次在最后加入一勺茂德公香辣酱,味道更加的好。这个香辣酱只是微辣,可以起到增香的作用,此道菜成品色泽红润,豆腐裹上一层浓浓的汤汁搭配花生米的香脆,是一道美味经典的下饭菜.......

  • 硬豆腐350克
  • 熟花生米1包
  • 青椒1个
  • 蒜苗1颗
  • 香辣酱1勺
  • 2克
  • 生抽2勺
  • 老抽几滴
  • 鸡粉2克
  • 蚝油1勺
  • 白胡椒粉3克
  • 生粉1勺

Steps to make 宫保豆腐

  • 1.辣味熟花生米一包
  • 2.姜、蒜切碎,青椒切小块,干辣椒和蒜苗切小段
  • 3.硬豆腐放置20分钟后擦干表面水份,然后切成约1cm的小方块
  • 4.锅内热油后下豆腐用中火油炸
  • 5.炸至如图所示呈金黄色时,盛出备用
  • 6.取一小碗加入以下配料:生粉、盐、生抽、老抽、蚝油、胡椒粉、鸡粉,水拌匀调制成茨汁
  • 7.锅内加一点油烧热,下姜、蒜和干辣椒小火炒出香味
  • 8.再下青椒和蒜段翻炒一下
  • 9.倒入炸好的豆腐,调入一大勺香辣酱
  • 10.倒入调制好的茨汁烧开后小火焖一下
  • 11.最后关火,加入熟花生米翻炒均匀
