Steps to make 橙汁菊花鱼

  • 1.草鱼一条约1千克取中断、去鳞洗净。
  • 2.从中间剖开、去骨。
  • 3.取去骨鱼皮向下、斜刀切三刀第四刀切断、注意前三刀不要切断要、切到鱼皮时再切下一刀。
  • 4.逐个切好、等待下一步操作。
  • 5.再取切好的夹刀片鱼、皮向下横刀切十字花刀、约一厘米宽、鱼皮不要切断逐个切好、放在碗内,加入味精、绍酒、精盐、姜汁水拌匀,腌渍10分钟。
  • 6.生粉装盘、取切好十字花刀的鱼片放入生粉中、使鱼的每一处都沾上生粉、以便于炸、菊花绽放。
  • 7.逐个切好、拍上生粉待用。
  • 8.取一条切好十字花刀的鱼、翻转围成一圈用筷子夹住、放入油锅中定型再松开筷子、至金黄色时捞出、(油温要七成热175°)。
  • 9.逐个炸好捞出装盘。
  • 10.橙汁也可用新鲜的橙子自己榨汁、我比较省事买的成品。
  • 11.橙汁倒入锅中、加入白糖、慢慢加热至白糖融化、再用淀粉勾欠。
  • 12.把熬好的橙汁浇在炸好形似的菊花的鱼上。
