自制发糕
发糕是我国传统面食小吃之一,发糕的做法与品种众多。今天用普通面粉做一款发面发糕,成品竟有十厘米厚度,蜂窝孔隙均匀、柔软且韧弹、口感暄软。

Details of ingredients

  • 面粉500g
  • 奶粉10g
  • 酵母4g
  • 泡打粉2.5g
  • 温水约400g
  • 白糖30g

Steps to make 自制发糕

  • 1.先将所有粉类混合均匀。
  • 2.倒入适量的温水搅拌均匀静置10分钟(盖上盖子)10钟后再次用搅拌。
  • 3.准备枸杞、葡萄干洗干净,并去除水份待用。
  • 4.放入底部及周边均用油纸铺好,倒入面糊二次饧发,摆入枸杞及葡萄干点缀,发至这样八分满即可(模具为8寸)。
  • 5.锅中水烧开将摸具放入锅中蒸20分钟(停火后3分钟后再打开盖)。
  • 6.发糕量了一下为10公分厚度,看来应该得用再大一些的模具会更好。
  • 7.切开的发糕蜂窝孔均匀,洁白膨松、柔软且韧弹,口感暄软。
