  • 1.主料
  • 2.将鳝鱼去骨和内脏,洗去血水,用盐反复搓洗身上粘液
  • 3.洗干净后去头和尾部,切断,用料酒和胡椒粉稍微腌制一会
  • 4.黄瓜切菱形片,红椒切小段,蒜头去皮,稍微拍一下
  • 5.锅里放一大勺油,烧热后放入鳝鱼片翻炒
  • 6.炒到鳝鱼稍微变色后盛出,锅里留油
  • 7.放入一大勺郫县豆瓣酱
  • 8.炒香后放入蒜头,用小火慢煎,煎至蒜头金黄,爆出香味
  • 9.放入黄瓜片和鳝鱼翻炒一会
  • 10.随后放入红椒继续翻炒
  • 11.用生粉勾个薄欠,倒入锅里
  • 12.煮至汤汁有些浓稠后放入一点香菜,加适量盐就可以关火出锅了
