炸春卷
春卷是中国传统节日食品,一种油炸食物,流行于中国各地,江南等地尤盛,民间除了供自己家里食用外,也常用于待客。

  • 包菜400g
  • 香菇200g
  • 20g
  • 生姜15g
  • 香干100g
  • 瘦肉250g
  • 蚝油8g
  • 胡萝卜1根

Steps to make 炸春卷

  • 1.春卷皮500g,装盘待用。
  • 2.全部食材清洗干净,瘦肉切肉丝,香干切薄片,香菇切薄片,胡萝卜去皮切丝,包菜切丝。
  • 3.葱切葱花,生姜切末。
  • 4.热锅放入适量油,倒入肉丝炒至变色,放入葱白和姜末炒香。
  • 5.放入胡萝卜丝和香菇片翻炒2分钟,再加入包菜和香干翻炒1分钟,放入适量盐和8g蚝油翻炒1分钟。
  • 6.放入适量鸡精和葱叶翻炒均匀。
  • 7.把炒好的料,盛入碗里待用。
  • 8.取一张春卷皮,放到盘子里,放上炒好的料,先把俩边折起来,再从下往上卷起来。
  • 9.把全部包好放入盘里。
  • 10.锅里放入500ml油,烧至7成热,放入春卷,接口的地方朝下,转小火炸制,待春卷定型再翻面。
  • 11.春卷炸至金黄色捞起来沥干油,放到厨房纸巾上,吸掉多余的油即可。
