手工菠菜鱼丸

Steps to make 手工菠菜鱼丸

  • 1.取菠菜叶子部分反复洗净。
  • 2.切成细丝。
  • 3.用开水焯水,再用料理机打成菠菜汁,然后再用细筛过滤去渣为菠菜汁。
  • 4.龙利鱼一条洗净去水份,再切成丝。
  • 5.将鱼肉丝放入料理机中,加入适量料酒、盐、白胡椒粉、1个鸡蛋清同搅打成泥状。
  • 6.打成泥状的鱼泥。
  • 7.我是加入了5汤匙菠菜汁再继续搅打成泥。
  • 8.菠菜鱼肉泥又经过细筛过滤后的鱼肉泥变得细腻有光泽。
  • 9.这是过滤出的鱼筋膜杂质。
  • 10.鱼肉泥与淀粉搅拌均匀后的状态。
  • 11.同时准备一碗清水用于挤鱼丸时勺子先沾水。
  • 12.锅中加入适量水加至稍低温度,左手握适量鱼泥从左手虎口中挤出圆形,右手拿小勺先沾点清水再从左手虎口处取出鱼丸放入锅中,以此类推、逐一做完下入锅中。
  • 13.中小火将鱼丸慢慢汆熟并盛出。
