春节正月期间,家里总少不了要吃几次春卷,一般都是趁家里有客人的时候做,这样炒的馅料料足,品种也多,味道也更加浓郁,看吧,一大锅呢!大家都不用抢,吃多少都有哦!一般都是直接包皮吃的,天气冷,外皮冰凉凉的,所以我会拿一些来油炸吃,很香脆,还热乎乎的,如果怕上火的亲们还是选择直接包皮吃好了!

    Steps to make 【炸春卷】

    • 1.猪肥瘦肉适量。
    • 2.木鱼干适量泡发,洗净后切末。
    • 3.虾米适量。
    • 4.春笋先用水煮熟,然后切末,香菇干泡发后捏干水分切末。
    • 5.酸菜叶洗净捏干水分切碎。
    • 6.芹菜洗净切末。
    • 7.藠子头适量,洗净切碎。
    • 8.豆芽适量,在流水下冲洗。
    • 9.把炒锅烧热,不放油,倒入豆芽干炒,炒去多余的水分。
    • 10.豆芽炒至透明,锅里也出现很多水。
    • 11.倒出来过滤,抖掉多余水分,然后改刀稍微切断,就不会一根根的那么长。
    • 12.再起热锅,先下入猪肥肉炒出油。
    • 13.猪油炸干。
    • 14.下入木鱼干,虾米,香菇干,继续炒一下,放适量酱油和料酒。
    • 15.继续下入春笋,酸菜,芹菜,豆芽,藠子头,适量盐,不断翻炒,炒的时间至少十五分钟。
    • 16.最后下入鸡精,翻炒均匀即可,先装一些出来,然后继续放辣椒粉,这样辣和不辣就都有了。
    • 17.取一张春卷皮,装适量菜,盖上一节春卷皮。
    • 18.两边往中间折。
    • 19.然后往前翻。
    • 20.锅中油烧至四五层热,春卷接口处朝下,放在漏勺中,放入油锅中稍微炸一下定型。
    • 21.然后倒回锅中炸至金黄沥干油即可。
