新春宴客菜,软炸虾仁,北方人大爱的一道家常菜,老人孩子都爱吃,招待客人也倍有面子,通常做法都是裹上面糊油炸,分享不一样的做法,不用调面糊,直接裹上打发好的蛋白油炸,外表金黄色,一口咬下去,外酥里嫩,口感松软,好吃到停不下来!

Steps to make 软炸虾仁

  • 1.准备食材:冷冻虾仁需要提前解冻。
  • 2.解冻后的虾仁反复清洗干净,再将里外的虾线挑出来,然后再反复清洗干净。
  • 3.清洗干净的虾仁加入少许盐,适量的料酒腌制5到10分钟左右。
  • 4.取一个大小适中的碗,将鸡蛋当黄蛋白分离,做这道软炸虾仁只用蛋清,当黄另做他用。蛋白加1g盐,滴几滴柠檬(没有可省略),用打蛋器打发至提起打蛋器带有尖角,纹路不消失即可。
  • 5.虾仁先裹上一层玉米淀粉(也可以用面粉),然后再裹上打发好的蛋白。
  • 6.锅中倒入适量多一点油,油温升到五成热后,依次下入裹上蛋白的虾仁,然后调成小火,慢炸三分钟左右。把虾仁炸熟,表面发黄即可,捞出控油。
  • 7.锅里油温升到六成热,倒入虾仁复炸一次,大约三十秒左右,炸至表面金黄,出锅装盘,出锅赶紧吃,外酥里嫩,味道鲜美,好吃到停不下来。
