Steps to make 干锅虾

  • 1.虾洗净剪去虾须,开背挑出虾线,加入少许盐、料酒、胡椒粉,腌制20分钟。
  • 2.香芹洗净切段,洋葱切成粗丝,葱姜切丝,蒜切片,香菜切段。
  • 3.金针菇切去根部,洗净焯水1分钟左右捞出控水。
  • 4.锅内倒入食用油烧热,放入腌制好的虾煎出虾油至金黄香脆,捡出备用。
  • 5.锅内底油放入火锅底料和豆瓣酱,炒出红油,加入葱、姜、蒜、花椒、麻椒炒香。
  • 6.放入香芹、洋葱、金针菇翻炒2分钟左右。
  • 7.放入煎好的虾,加入生抽、白糖、胡椒粉、盐翻炒几下。
  • 8.撒上白芝麻和香菜段,关火即可。
