Steps to make 梅花豆包

  • 1.白面团:300克面粉+3克酵母粉+100克水。
  • 2.紫面团:300克面粉+3克酵母粉+30克紫薯+100水。揉好的面团盖上盖,20℃饧发2小时至面团体积膨大两倍,内部呈蜂窝状为止。
  • 3.发好的面团揉至表面光滑。
  • 4.切成剂子后,擀成皮,皮不能太薄。
  • 5.将两张面皮叠在一起。
  • 6.面皮上放豆沙馅,豆沙馅可以提前用面粉搓成型,便于包制。
  • 7.左手托住面皮,右手五指使面皮向中间合拢,最后捏紧。
  • 8.也可以将面皮换一下位置。
  • 9.包法一样。将做好的豆包盖上干净的毛巾再饧10分钟,放入装有冷水的蒸锅中,大火烧开后,转中火蒸10分钟即可。
