Steps to make 香草戚风蛋糕

  • 1.香草豆荚剪开,取出籽
  • 2.籽放进牛奶中加热,让牛奶吸取香草豆荚的香气,然后过筛掉籽,留下牛奶备用
  • 3.蛋白和蛋黄分离,蛋黄用力打散后加入油充分搅拌
  • 4.拌匀后加入糖搅拌
  • 5.再加入煮过香草豆荚的牛奶,搅拌均匀
  • 6.过筛加入低粉,搅拌至无颗粒
  • 7.蛋白加入几滴柠檬汁,可以帮助打发和去惺,也可不加或加醋
  • 8.开动打蛋器,分三次加入糖打发蛋白
  • 9.加入玉米淀粉打发至蛋白霜完全不会流动,能拉出尖角,也要注意不要打过头,打过头的蛋白霜没有光泽,结块,这样的蛋白霜做出的蛋糕会较干,口感不好
  • 10.取三分之一的蛋白霜加入蛋黄糊里
  • 11.用切拌的方式拌匀,不能画圈搅拌,这样会破坏蛋白霜中的气泡
  • 12.再倒回进剩下的蛋白霜中,同样用切拌的方式拌匀
  • 13.缓缓倒入模具,震去大气泡后入烤箱160度烤60分钟,烤好后从高处摔落一下震出水蒸气,然后马上倒扣,一定要等完全冷却后再脱模
  • 14.可以搭配果酱或奶油,增加风味
