抹茶慕斯蛋糕

  • 鸡蛋2个
  • 低筋面粉30g
  • 牛奶20g
  • 淡奶油200g
  • 细砂糖15g
  • 抹茶粉5g
  • 细砂糖36g
  • 30g
  • 砂糖10g
  • 朗姆酒5g
  • 色拉油20g
  • 抹茶粉3g
  • 牛奶50g
  • 吉利丁片2片

Steps to make 抹茶慕斯蛋糕

  • 1.蛋白与蛋黄分开,蛋黄打散
  • 2.加入牛奶和色拉油,搅打均匀
  • 3.筛入低粉和抹茶粉,翻拌均匀
  • 4.蛋白加糖,打至干性发泡,提起打蛋头有短小直立的尖角
  • 5.将1/3的蛋白与蛋黄糊翻拌均匀, 再将蛋黄糊倒进蛋白盆中,继续翻拌均匀
  • 6.把蛋糕糊倒入模具中,入烤箱,中层,上下火150度,40分钟左右
  • 7.烤好了之后,倒扣在冷却架上
  • 8.将上层不平整的地方削掉,再切成两片蛋糕待用
  • 9.之后来做慕斯液,淡奶油加糖打发,打成清晰的花纹及可,注意:还是要流动的
  • 10.牛奶加热,放入用冷水泡软的吉利丁片,搅拌均匀,将牛奶吉利丁液保温,温度太低会凝固,所以要保温
  • 11.倒入奶油中搅拌均匀,慕斯液就做好了(我的慕斯液中加了抹茶粉,所以是绿的)
  • 12.开始做糖酒液:将细砂糖倒入水中,加热至糖完全融化,冷却之后倒入朗姆酒,糖酒液就做好了(糖酒液我是用的以前的,所以我没拍)
  • 13.取出一片抹茶蛋糕,放入模具底部
  • 14.刷一层糖酒液
  • 15.倒入一半的慕斯液放入冰箱冷冻一下,至慕斯液稍凝固,你就可以放第二片蛋糕片,它就不会掉下去
  • 16.把剩下的全部抹茶粉筛入慕斯液里,搅拌均匀
  • 17.在慕斯液上放上第二片刷了 糖酒液的蛋糕片
  • 18.倒入抹茶慕斯液
  • 19.放入冰箱,冷藏过夜,用吹风机在模具旁边吹一吹就容易脱模了
  • 20.是不是很美呀
