  • 1勺
  • 冰糖10g
  • 香叶少许
  • 茴香少许
  • 一块
  • 10个
  • 花椒1把
  • 八角5颗
  • 大料8颗
  • 大葱3段
  • 少许

Steps to make 麻辣冷吃兔

  • 1.兔肉切丁,和大拇指指甲大小差不多就可以了,大葱切段,泡海椒切段,老姜切片,大蒜拍烂去皮。
  • 2.兔丁用清水洗去血水(要是时间充足可以放一点盐泡一下)
  • 3.开水过一下,去除血水,捞起沥干水分备用
  • 4.这一步很关键噢,油要多,如果大家用的是菜籽油,那一定要煎熟,不然会有生油味,煎好以后关火稍微冷却一下,要不然这个时候下锅很容易把肉炸糊。
  • 5.下油锅炸至表面金黄,肉质偏干就可以了。
  • 6.捞出,将锅内多余的油装碗备用。
  • 7.下姜蒜,泡海椒炒香。
  • 8.放入除八角以外的香料,翻炒两下。
  • 9.加水熬十分钟左右,我喜欢水多一点慢慢把材料的味道熬出来,如果大家家里有陈皮,还可以放入少许陈皮。
  • 10.放八角
  • 11.冰糖。
  • 12.十分钟后倒入爆好的兔丁,继续熬至水分抽干
  • 13.水份抽干后加入少许醋,大概一勺左右
  • 14.盐
  • 15.干海椒
  • 16.倒入之前爆过兔丁的油。
  • 17.加入大葱
  • 18.加入海椒面
  • 19.撒上芝麻
  • 20.最后翻炒几下出锅。
  • 21.起锅后冷却,这个时候不要觉得油很多,我们大自贡的冷吃兔吃油凶得很,你放冷差不多油就没得了
