白萝卜烧排骨

  • 1小茶匙
  • 白糖2勺
  • 味精少许
  • 蚝油1勺

Steps to make 白萝卜烧排骨

  • 1.排骨在清水中浸泡半天,中间换一次水,倒去血水,洗净备用。
  • 2.将排骨放入,加1勺量的料酒,氽烫后捞出。
  • 3.铁锅注入冷水,大火烧开,将切成大块的白萝卜切放入,水开后捞出,备用。
  • 4.萝卜捞出后,再将排骨放入,加少许料酒,氽烫后捞出。
  • 5.另起油锅,放入姜片爆香,放入氽烫好的排骨,放1勺量的料酒去腥。
  • 6.加草茹老抽上色。
  • 7.中小火翻炒五分钟,待排骨内的油稍出,注入半锅热水(漫过排骨),大火烧开,再放入葱段,盖上锅盖,小火焖烧一小时。
  • 8.将白萝卜倒入锅内。
  • 9.加蚝油、盐,转中小火烧二十分钟,待汤汁浓稠,加两勺白糖(红糖更佳)、鸡精,再烧五分钟,即可出锅食用。
