Steps to make 猪肉炖粉条

  • 1.准备好主料和辅料
  • 2.五花肉过水,目的煮出肉里的血水。五花肉放到炒锅里,放水没过五花肉,水开煮五分钟左右,关火。
  • 3.温水洗干净五花肉,切成两厘米左右的方块,葱切段,姜切片。宽粉放入热水中泡软。
  • 4.炒锅放入适量底油,油热爆香葱姜大料,然后放入五花肉块煸炒,炒至五花肉表皮略焦黄。
  • 5.放入料酒,少量老抽,煸炒。
  • 6.煸炒均匀后,放入热水,没过五花肉,水略多些,以免烧干。因为炖煮时间较长,中途不能加水。水开后,小火炖煮1小时左右,直至肉软烂。如果用高压锅,在压阀后,炖20分钟即可。
  • 7.加入宽粉,中火继续炖煮,直至宽粉炖烂。
  • 8.大火收干水份,即可起锅了
