香辣青花蟹

Steps to make 香辣青花蟹

  • 1.买了3只生猛的青花蟹,一斤4两重。
  • 2.螃蟹清洗干净,去腮,胃,心脏,每个螃蟹切成4块,两个钳子摘下来用刀拍出裂缝,其他爪子剪掉爪尖。这样操作更好入味。
  • 3.把需要材料准备齐全,葱白和葱叶分开用。
  • 4.爆香花椒。
  • 5.然后放入葱姜片,干辣椒段爆香。
  • 6.螃蟹里放一勺淀粉颠匀即可。下入锅内,不要急着翻动,等变色再翻面。
  • 7.两面都变色后顺着锅边淋入一圈米酒,调入生抽,老抽,盐,白糖,加入即将没过螃蟹的热水,中火撒上葱段搅匀盖锅盖焖煮。
  • 8.这时候可以把洗干净的蟹壳放上面,变色后用来摆盘装饰。
  • 9.大概煮8分钟即可,去掉蟹壳,开大火开始收汁。用10ml水加淀粉,白胡椒粉,香油调成汁勾芡,撒上香葱叶即可出锅。
  • 10.简直好吃饭停不下来。
