绿豆沙冰皮月饼

  • 牛奶160g

Steps to make 绿豆沙冰皮月饼

  • 1.糯米粉50g,粘米粉35g,澄粉25g,白糖10g,牛奶160g,玉米油20g称好备用。
  • 2.把步骤1所有材料搅拌均匀。(尽量不要有粉疙瘩,可以用勺子压或者用手捏匀)
  • 3.隔水蒸熟,在蒸的过程搅拌几次,搅拌至成固态再蒸10分钟。
  • 4.蒸好的皮放置冷却。(要盖保鲜膜,防止变硬)
  • 5.另起干净无水的锅,加入适量糯米粉,小火炒至微黄即可做手粉。
  • 6.冷却的冰皮分成15g的小团。
  • 7.绿豆沙35g团成圆球。(冰皮:馅=3:7。我的模具是50g的)
  • 8.冰皮用手尽量压扁,在中间放上一个绿豆球。
  • 9.借助虎口的力量往上推,最后团成一颗球形即可。
  • 10.团好的月饼球放在手粉上滚一下,月饼模撒一层粉,抖去多余的,小心把月饼球放入模具中。
  • 11.小心压出一个个月饼即可。
  • 12.最后用软刷刷去表面多余的手粉,放在保鲜盒中,冰箱冷藏即可食用。
