今天的蛋糕卷依旧是小四卷,只是里面加了点红曲酒糟,颜色就变成粉粉的啦!

  • 牛奶40克
  • 淡奶油250克
  • 砂糖25克

  • 1.取适量红曲酒糟用牛奶冲洗,过滤出红色牛奶(可以直接用红曲粉代替)
  • 2.蛋清与蛋黄分离,分别装入无水无油的打蛋盆中
  • 3.将蛋黄中加玉米油
  • 4.再加入红色牛奶,搅拌到表面没有油星的状态
  • 5.筛入低筋粉
  • 6.翻拌均匀,放在一边备用
  • 7.打发蛋白,分三次加入细砂糖
  • 8.蛋白打发到大弯钩状态
  • 9.取1/3的蛋白霜加到蛋黄糊中,从底部翻拌均匀
  • 10.再倒回剩下的蛋白霜里
  • 11.从底部翻拌均匀,直到拌成均匀细腻的蛋糕糊
  • 12.倒入铺了油纸的金盘中,轻震几下
  • 13.放入预热好的烤箱中层,上下火155度烤15分钟左右,烤好后取出,表面盖一层油纸,翻面倒扣,晾凉
  • 14.淡奶油加入细砂糖,打发到裱花状态后
  • 15.用抹刀将淡奶油堆在蛋糕坯中间
  • 16.卷动油纸,将蛋糕体两端朝中间卷起,接口朝下,入冰箱冷藏半小时
  • 17.冷藏后揭开油纸,将两端切去一小块,这样两端的奶油切面更光滑
