Steps to make Garlic puree and white meat
- 1. Prepare the base ingredients first, such as mung bean sprouts, cucumbers, or other favorite ingredients. Boil the bean sprouts in hot water, control the moisture and spread them evenly on the bottom of the plate.
- 2. Pork belly, with or without skin, according to personal preference. Put cold water into the pot, boil for about 20 minutes after boiling, and use a long bamboo stick to tie the thickest part without bleeding water.
- 3. Take out the cooked meat and cool it thoroughly, then slice it thinly.
- 4. Place evenly on the top of the dish. This time, I use dried tofu as the base.
- 5. To make seasoning, it is best to mash garlic and ginger in a garlic jar, pour a little cold water and mix well. Pour into a bowl, add an appropriate amount of salt, sugar, light soy sauce, chili oil, Sichuan pepper noodles, chopped scallions, and cooked sesame seeds. Heat some hot oil and add seasoning.
- 6. Drizzle seasoning onto the meat and garnish with cilantro.
