小时候最爱吃妈妈做的炸酱面了,现在离家在外地,吃不到妈妈做的面了。没办法,现在现在自己动手来做了,最后入口,真的很棒!!

    • 1.猪肉买的时候带点肥的,吃的时候比较香。
    • 2.把葱,姜,蒜,辣椒都切好备用。
    • 3.猪肉切丝后,用半勺盐,姜丝,白胡椒粉,料酒1勺,蚝油腌制15分钟入味。
    • 4.六月鲜豆瓣酱2大勺,再加1勺甜面酱,3大勺清水,搅拌均匀。
    • 5.豆干洗净切成薄片。
    • 6.胡萝卜和黄瓜各切丝备用。(和擦丝器比用刀切出来,比较有口感)
    • 7.小火,锅里倒凉油,把葱放入翻炒。
    • 8.炒到葱微微变黄后,关火,滤出葱油。
    • 9.看,这是过滤好的葱油。
    • 10.锅里重新倒少量油,把胡萝卜丝放入翻炒,翻炒一会后乘出。(红萝卜翻炒过后更容易被人体吸收营养)
    • 11.锅内留底油,把切好的豆干放入小火慢煎, 煎成金黄色即可。
    • 12.把煎好的豆干切成丝。
    • 13.锅内倒少许油,把姜蒜片煸香,把腌好的肉丝放入翻炒,等到肉丝变色之后把辣椒放入翻炒。
    • 14.肉丝炒香后把调好的料汁倒入锅内; 盖上锅盖小火20分钟慢熬入味,汤汁浓稠后再撒点葱花,继续盖上锅盖小火烧1分钟即可。
    • 15.锅里水烧开后把面条放入。
    • 16.等水再次烧开后,把面条捞出。
    • 17.趁面条热的时候,把做好的葱油浇上,搅拌均匀。
    • 18.放上配料和炸酱,一碗香喷喷的葱油豆丝炸酱面就做好了。
