红丝绒烫面戚风卷

Steps to make 红丝绒烫面戚风卷

  • 1.50克牛奶加20克砂糖50克色拉油倒入锅中加热不断搅拌烧开立即关火,继续搅拌至温热
  • 2.低筋粉和红曲粉过筛
  • 3.倒入温热的(1)中
  • 4.搅拌均匀成为烫面糊
  • 5.面糊完全冷却后分次加入5个蛋黄搅拌均匀
  • 6.拌好的蛋黄面糊放冰箱冷藏备用
  • 7.蛋白加入数滴柠檬汁高速打至鱼眼粗泡
  • 8.加入第一次砂糖中速打至浓稠加入第二次砂糖
  • 9.打出细微纹路加第三次砂糖
  • 10.打到明显纹路,蛋白有直立小弯角就可以了.如果不是做蛋糕卷要打发到直立尖角
  • 11.取三分之一蛋白加入蛋黄糊里,上下翻动切拌均匀
  • 12.倒回剩余蛋白中,切拌均匀
  • 13.拌好的面糊是应该有一定稠度的,如果太稀,可能是切拌中蛋白有消泡,会导致蛋糕蓬发不好,回缩等问题
  • 14.烤盘底垫上相同大小油纸,面糊倒入烤盘,用梯形刮板轻轻刮平表面,用手轻轻拍打几下烤盘底部,震出大气泡
  • 15.烤箱预热160度,中下层35分钟
  • 16.出炉,倒扣脱模待凉撕去底部油纸
  • 17.100克奶酪加10克砂糖隔水加热软化,搅拌均匀
  • 18.加入少许百利甜酒和奶酪搅拌均匀
  • 19.淡奶油加10克砂糖打到浓稠半流动状态,加入奶酪糊
  • 20.搅拌均匀的奶酪糊放冰箱冷藏
  • 21.蛋糕修边涂上奶酪糊,这步忘记拍照了,请谅解!!用新的油纸卷好
  • 22.两头捏紧包好,放冰箱冷藏定型
  • 23.冷藏后切片,每次切时清洁刀口
  • 24.切口不太漂亮啊!哈哈
