蕃茄牛腩
这道菜恐怕家家都做吧。想起做这道菜,缘于几天前看的《侣行》那部系列纪录片,北京那对曾经自驾船游南北极的小两口,在巴西的白人贫民窟给一家人做了这个菜,周围的白人贫民排着队求分食一勺。
只是他们做的没放土豆、胡萝卜,西红柿足有3、5斤。

Steps to make 蕃茄牛腩

  • 1.牛腩切块,放清水中泡20多分钟去血水
  • 2.之后过水焯一下捞出
  • 3.炒锅中倒少许油,油热后放入冰糖,冰糖完全溶化后,加入牛肉翻炒上色
  • 4.高压锅加水,放入牛腩压20分钟,水的量可以到高压锅内蒸屉位置的高度
  • 5.解压后捞出牛肉
  • 6.三种配菜洗净,2个西红柿外加几个圣女果
  • 7.切块,西红柿在煮开的水中烫一下去皮,然后再切薄块
  • 8.葱姜切好、调料备好,我这个调料包是头一天做肉皮用过的那个,料足味够,还可以再用一回
  • 9.若想土豆禁炖、有型,可以过油炸一下,我这个只是用油炒了一下,效果似乎不明显
  • 10.锅中放少量油,加入西红柿翻炒
  • 11.将高压锅中的肉汤及牛肉倒入,加入除盐外的所有调料和胡萝卜,汤的高度与菜相当或高出
  • 12.中火炖约20分钟后再加入土豆和盐
  • 13.继续炖15-20分钟就可以出锅啦
  • 14.土豆很好熟,不用炖太久
  • 15.出锅后,可以洒上葱花或香菜
  • 16.再来点白胡椒粉,哈哈,秋天大爱。
