【宫保虾球】
简单快炒的菜
又是一道可以派上大餐的年菜,宴客菜
其实5分钟就可以诞生
前提只要调制好宫保汁
虾是很容易煮熟
就可以保证在快炒的时间内做出滑嫩鲜香的虾球

Details of ingredients

  • 新鲜虾300克
  • 蛋清半个
  • 红辣椒3个
  • 花椒少许
  • 花生1把
  • 生抽1勺
  • 料酒1勺
  • 白糖半勺
  • 米醋1勺
  • 香油半勺
  • 水淀粉1~2勺
  • 胡椒粉少许
  • 鸡精1/2匙
  • 少许

Steps to make 【宫保虾球】

  • 1.鲜虾洗净去壳,抽出虾线,用刀在虾背上轻轻划上一刀(即开背)也可以把虾尾留下会更美观
  • 2.加入蛋清抓匀,再加入胡椒粉,料酒,少许盐和淀粉抓匀,腌制片刻入味
  • 3.将生抽,白糖,淀粉,水,米醋,少许盐,鸡精, 香油一起倒入碗内,调匀备用(虾不宜炒久,会使肉质变硬,所以宫保汁应事先调好,快速翻炒时调入时间就差不多
  • 4.辣椒去籽切小段,蒜切片,葱姜切碎备用
  • 5.锅内小火加热少许油,倒入花生不停翻炒至变成褐红色,关火盛出备用(注意不能大火,花生很容易焦)
  • 6.留下油加至6成热,倒入花椒,蒜,辣椒一起爆香
  • 7.加入腌制过的虾仁快速炒散至变色
  • 8.放入葱花,快速炒匀
  • 9.加入事先调好的宫保汁,炒匀,使虾球充分发挥包裹住酱汁
  • 10.关火,快速将炒香的花生加入拌匀即可(没有花生也可以用杏仁)
