纸杯蛋糕之奶油裱花

  • 牛奶40克
  • 玉米油25克
  • 低筋面粉45克
  • 动物性奶油200克
  • 盐粉少许

Steps to make 纸杯蛋糕之奶油裱花

  • 1.蛋白与蛋黄分离(鸡蛋选大一点的,一个大概60克)蛋黄分离后40克左右加入10克糖粉用蛋抽搅至糖粉溶化
  • 2.加入40克牛奶和25克玉米油用蛋抽搅打五分钟左右呈乳白状即可
  • 3.筛入事先过筛好的45克低筋面粉和少许盐粉(我习惯过筛三次)
  • 4.用橡皮刮刀拌匀至细腻面糊
  • 5.蛋白80克左右加几滴柠檬汁用电动打蛋器打散并加入三分之一的白糖
  • 6.高速打发至细腻气泡时加入第二次三分之一白糖
  • 7.继续高速打发,出现纹路时加入最后一次白糖
  • 8.打发至硬性即提起打蛋器呈直立小尖角
  • 9.取三分之一的蛋白到蛋黄糊里用橡皮刮刀以翻拌的方式拌匀
  • 10.拌匀后倒入盛蛋白的盆里用翻拌的方式拌匀蛋糕糊
  • 11.拌好的蛋糕糊很细腻
  • 12.蛋糕糊装入一次性裱花袋剪一口子将蛋糕糊注入烘焙纸杯,七分满即可
  • 13.装好蛋糕糊的纸杯轻震几下震去大气泡后送进预热好的烤箱中层,上下火180度烤25分钟
  • 14.出炉后晾凉备用
  • 15.200克奶油加入20克白糖用电动打蛋器打发至裱花状态
  • 16.取菊花嘴放入一次性裱花袋后放入打发好的奶油,裱花袋剪一小口
  • 17.挤出自己喜欢的样子后撒些糖针进行装饰
